Hangzhou Cuisine

West Lake Fish in Sweet and Sour Sauce
It is prepared with a West Lake grass carp, weighing about 0.5kg and starved for two days, as its main ingredient. Boiled for three minutes and pour sugar and vinegar sauce over it, the fish tastes delicious in a taste of crab.

Shelled Shrimp with Dragon Well Tea

This dish is prepared with the shelled fresh water shrimps and the well-known Dragon-Well green tea leaves. It is beautiful in color with special tastes.

West Lake Water Shield Soup

Prepared with the West Lake Water Shield and minced chicken slice, it tastes fresh and delicious.

Dongpo Pork

It is cooked by braising fine-skinned and thin pieces of fat streaked pork with famous Shaoxing wine in a sealed pot. When the dish is ready, the pork will be moist and red, and the sauce well be thick and tasty. It tastes savory, sweet and full of body, but not greasy.

Deep-fried Bean-curd Rolls Stuffed with Minced Tenderloin

Cut the bean-curd roll into small segments, then deep-fry them in a pot. When the food is served, the bean-curd rolls are golden and taste crispy with a faint scent of soybean.

Jiaohua Broiler

Slaughter a broiler and wash it clean. Then cram the chicken¡¯s cavity with fried pork. Pour lard over it and wrap with lotus leaves. Then soak it in Shaoxing wine and coat it with a layer of mud from the wine jug. This being done, broil it first in a high heat and then on a slow flame. When the mud is baked dry, smash it on the ground and break off the clay. This dish is tender, fresh, juicy, crisp, tasty and full of the fragrance of lotus.


Hangzhou Specialties

Silk

Hangzhou has long been famous as the ¡® home of silk¡¯ with a history of more than 2,000 years. It won high reputation in Tang Dynasty. Hangzhou silk has over ten varieties with more than 200 products. Gold and silver awards have been given to some famous products by the State.

Hangzhou Brocade

Famed as ¡® the cloud in the sky and flowers on earth¡¯, it has been a wonder in arts and handicrafts in China. Hangzhou brocade handicrafts first appeared in Tang Dynasty. Today the brocade has two main varieties of decoration and daily use including the tapestry, tablecloth, bed cover and so on. The most famous products are produced by Hangzhou Du Jinsheng Brocade Factory which exported to over 80 countries and regions.

Dragon Well Tea

Produced among the hills by the West Lake with a history of 1,200 years, it is the best green tea in China. It is well-known for its ¡® green color, fragrance, pure taste and beautiful shape.¡¯

Wang Xingji Fan

The fan making crafts began in Southern Song Dynasty. And it was ranked with silk and tea as the ¡® three best products in Hangzhou¡¯ since Ming and Qing Dynasties. The most famous products are the black paper fans and sandalwood fans.

Zhang Xiaoquan Scissors

A famous brand and the champion of scissors in China, Zhang Xiaoquan Scissors were already listed as ¡®articles of tribute¡¯ during the Qianlong reign (1736-1795) of the Qing Dynasty. With steel evenly inland, a clear division of iron and steel and sharp blade, exquisite and novel in design, solid, firm, durable and convenient in use, the scissors have been well received in market.

Hangzhou Chrysanthemum

Also called white chrysanthemum, was once served as tribute to the imperial court with Dragon Well Tea in ancient times. It is well known for its curative effect in helping clear the eyes and relieve internal heat or fever and treatment of hypertension, migraine and emergent conjunctivitis.

West Lake Silk Parasols

Bamboo framed silk parasols is soft in texture with little weight. An open parasol is nothing less than a flower with all its brilliant colors, yet when closed the parasol is a piece of bamboo.
