How to make brownies

~Brownies~
Before: High-Fat Version
2 squares (2 oz) unsweetened chocolate (56 g)
1/2 cup butter (125 ml)
1 cup sugar (250 ml)
2 eggs
1/2 cup flour (125 ml)
pinch of salt
1 cup coarsely chopped pecans (250 ml)
1/2 teaspoonful vanilla (2 ml)
Melt chocolate in a pan over hot water. Cream butter until soft; gradually add sugar and beat until mixture is light and fluffy. Add eggs, one at a time, beating after each addition. Sift flour with salt and stir into mixture. Stir in nuts, melted chocolate and vanilla. Spread mixture in a greased 8 inch (21) square pan and bake in 350 F (180 C) oven for 20 to 25 minutes. Cool slightly and cut into squares.
Makes 12. Per serving: 257 calories, 17.8 g fat, and 62 percent of calories from fat.

After: Low-Fat Version
6 oz semisweet chocolate (175 g)
1/4 cup hot water (50 ml)
4 egg whites
1 tsp vanilla (5 ml)
2/3 cup granulated sugar (150 ml)
2/3 cup all- purpose flour (150 ml)
1 tsp baking powder (5 ml)
pinch of salt
Melt chocolate with water, stirring until smooth. Remove from heat. Let cool slightly. Whisk in egg whites and vanilla. Stir together sugar, flour, baking powder and salt; stir into chocolate batter just until combined. Pour into lightly greased 8 inch (21) square cake pan. Bake in 350 F (180 C) oven for 20 to 25 minutes or until edges pull away from pan. Let cool in rack.
